The global market for carotenoids is ca$900M and is expected to top $1.1Bn by as the demand for natural ingredients increases (Nutraingredients 2013). Carotenoids are an important class of natural fat soluble pigments commonly found in many plants, algae and photosynthetic bacteria and are widely recognised for their red, orange and yellow colours. There is substantial evidence that anti-oxidants have an important role to play in protecting the body from oxidative stress induced by a variety of diseased states, life-style choices, the aging process, and exercise. As animals are unable to synthesise these molecules, they must absorb these from the food they eat. While some foods have naturally high levels of certain anti-oxidants, there is a growing interest in the enrichment of foods and drinks with anti-oxidants either through direct means or by dietary intervention in the food chains.
